Ingredients:

2 lbs. ground beef
2 medium diced onion
1/2 cup Buffalo Tom’s Gourmet Hot Sauce
2 beaten eggs
1 1/2 tsp. salt
1/2 tsp. pepper
1-1/2 cup toasted bread crumbs
4 to 6 slices of Provolone Cheese
4 to 6 slices of Cappicola or ham (milder)

Preparation:

Combine all ingredients EXCEPT Provolone Cheese and Cappicola or Ham and 1/2 of the Buffalo Tom’s Gourmet Hot Sauce (1/4 cup).

Once the mixture is uniform, spread it out on a piece of aluminum foil or wax paper / parchment paper. Make it about 1 inch thick and the width of the loaf baking pan.

Lay the pieces of provolone cheese followed by Cappicola or Ham on the meat mixture.

Carefully roll the meat mixture with the slices of cheese and cappicola or ham into a log. Place it into the loaf pan with the seam side down(be sure to Close the seam of the meat with an extra beaten egg) and bake at 350 for 1 to1-1/2 hours. (Be sure internal temp is 180deg F.) Baste with remaining Buffalo Tom’s Gourmet Hot Sauce while baking.

Serves 4-6. **Note** allow the meatloaf to cool and set up for 10-15 minutes it is a most attractive dish when sliced and served with it’s pinwheel appearance oozing cheese!
